Depending on the winemaking procedure, this process may be undertaken before crushing with the purpose of lowering the development of tannins and vegetal flavors in the resulting wine. Single berry harvesting, as is done with some German Trockenbeerenauslese, avoids this step altogether with the grapes being individually selected.

[/et_pb_text][/et_pb_column][et_pb_column type=”1_2” _builder_version=”4.19.2” _module_preset=”default” global_colors_info=”{}” theme_builder_area=”post_content”][et_pb_text _builder_version=”4.19.2” _module_preset=”default” ul_text_color=”#B98D58” ul_font_size=”22px” ul_line_height=”1.9em” custom_margin=”10px||||false|false” custom_padding=”30px|||30px|false|false” hover_enabled=”0” border_width_top=”3px” border_color_top=”#B98D58” global_colors_info=”{}” theme_builder_area=”post_content” sticky_enabled=”0”]

Recent Posts

Health Benefits of White Wine

Annual Wine Awards 2020

The New Vineyard

How to Choose Wine

[/et_pb_text][/et_pb_column][/et_pb_row][et_pb_row _builder_version=”4.19.2” _module_preset=”default” custom_padding=”||0px||false|false” global_colors_info=”{}” theme_builder_area=”post_content”][et_pb_column type=”4_4” _builder_version=”4.19.2” _module_preset=”default” global_colors_info=”{}” theme_builder_area=”post_content”][et_pb_text _builder_version=”4.19.2” _module_preset=”default” global_colors_info=”{}” theme_builder_area=”post_content”]

Crushing is the process when gently squeezing the berries and breaking the skins to start to liberate the contents of the berries. These can also destem at the same time. However, in larger wineries, a mechanical crusher/destemmer is used. The decision about destemming is different for red and white wine making. Generally when making white wine the fruit is only crushed, the stems are then placed in the press with the berries. The presence of stems in the mix facilitates pressing by allowing juice to flow past flattened skins.

[/et_pb_text][et_pb_text _builder_version=”4.19.2” _module_preset=”default” global_colors_info=”{}” theme_builder_area=”post_content”]

Your content goes here.
